Joyce Chen is a Taiwanese-Canadian chef born and raised, and based in Bangkok, Thailand. Her culinary style blends Western and Asian flavors, combining techniques from both traditions. Her adventurous yet structured approach to life is reflected in her food—playful yet approachable, creative yet balanced. She embraces bold flavors and has the courage to experiment with new combinations that harmonize beautifully. Her passion for travel and cultural exploration has shaped her cooking, allowing her to absorb and adapt influences from her experiences. She has no limitations when it comes to food—she’s open to trying anything. She believes that not knowing and not trying leads to missed opportunities and unanswered questions, and she approaches both life and cuisine with an open mind and a fearless spirit. She believes that experiencing food should engage all five human senses—sight, smell, sound, taste, and touch—whether it’s at a local street food stall or a fine dining restaurant.
